GCSE HOSPITALITY (Single Award)
COURSE CONTENT
You will study
UNIT 1 - Hospitality and the Customer - EXAM
In unit 1 you will investigate Hospitality, different Sectors (i.e. Commercial and Catering services), different types of outlets (e.g. Hotels, B&B, Hospitals, School Canteen) and identify the role of hospitality within other industries (e.g. Travel & Tourism, Health, Education). You will also look at Career opportunities within Hospitality and Customer Care.
UNIT 2 - Reception and Accommodation - COURSEWORK
In unit 2 you will investigate reception duties (e.g. enquiries and bookings, answering the telephone, check in and out, handling complaints and dealing with payments), links with other departments in a hotel (e.g. catering, functions, reservations systems), methods of payment, cleaning and servicing of accommodation and health and safety. You will also complete the 'Welcome Europe Certificate' where you focus on meeting and greeting customers in a foreign language (French).
UNIT 3 - Food and Drink - COURSEWORK (Practical)
You will complete the 'Basic Food Hygiene Certificate'. You will plan and cost meals and a function and will look at safety in the kitchen. You will also prepare, cook and serve 2 meals and contribute towards a function.
ASSESSMENT
Unit 1 - Written Examination 25%
Unit 2 - Work Related Assignments 1 25%
Unit 3 - Work Related Assignments 2 50%
EXAMINATIONS
You will sit one, 1 hour examination for unit 1 in June, consisting of short and long answer questions.
COURSEWORK
You must complete 4 pieces of coursework during the 2 year course.
UNIT 2 COURSEWORK: 1 substantial piece of coursework consisting of practical elements, e.g. how to take a telephone booking as a receptionist and how to set up a courtesy tray. The majority of this coursework is written and photographic evidence is required.
UNIT 3 PRACTICAL COURSEWORK:
PART A: 2 meals must be planned, prepared and cooked using the scenario given by the teacher (photographs must be taken during all stages of the meal as evidence).
PART B: is planning, preparing and undertaking a function with a minimum of 10 people, each pupil undertaking a specific role in the function. This must be written up in detail with photographic evidence.
